1/2 cup peanut oil
4 tablespoons flour
1 1/2 cup diced onions
1 1/2 cup diced sweet pepper
1 lb sausage, diced ( I like smoked turkey sausage)
3 cups diced chicken (or duck or pheasant or goose...)
3 qts chicken broth
1 tablespoon paprika
1 tablespoon salt
5 cloves garlic, minced
1 lb medium shrimp, peeled and deveined
1 teaspoon ground thyme
1/4 cup fresh parsley
6-8 cups cooked rice
in medium skillet combine oil and flour over medium heat to make roux...constantly stir until it reaches mahogany color then remove from heat and onions and peppers. Watch closely as it goes from done to burnt really quickly; if it smells burnt start over.
in large heavy stock pot cook sausage then add chicken and cook until browned. Next add broth, paprika, salt, and garlic. Stir in roux thoroughly and bring to a boil, stirring often. Reduce heat and cook until chicken is tender (about 1 1/2 hrs).
After chicken is tender add shrimp, thyme, adn parsley. Cook about 4-6 minutes until shrimp is pink.
