I made this yesterday and it turned out very good.
This is for 5lbs of meat
1 1/2 cup of soy sauce
6 Tbs of frozen orange juice concentrate
1/4 cup of sherry
2 tsp garlic powder
1/2 tsp powdered ginger
2 Tbs black pepper
5 Tbs Mortens Tender Quick(1 tablespoon per pound of meat)
Mix all of the ingredients in a quart jar and fill the balance of the jar with water.
Shake well and pour over your meat inside a ziplock bag.
Marinate for 24hrs in the frig.
Lay on a wire rack and blot with a paper towel.
Let site out and air dry until the the pieces are tacky and have a slight sheen.
Dry in a food dryer.
When the jerky is dried to your liking, stop drying. You dont have to dry it to the point that you cant chew it since you cured it.
