Looking for new meat cuts?

For those of yow who cut your own meat, there is a resource that I think might help in utilizing some cuts that you might otherwise grind.

I remember in 1997 the Beef board had a chef doing a demo of the Sierra cut, from the Chuck, but it wasn't called that at the time. It was pretty tender.
