Our personal favorite for a quick and easy, pour-it-in marinade is Yoshida's Original Gourmet Cooking Sauce, then plunk in a splash of Colgin's Liquid Smoke. Super easy and super tasty...though we usually save this marinade for the deer, as the flavor of elk itself is pretty dang good already!

I just use a dry rub. This one is the most popular with my friends. You can mix it up ahead of time and take just what you will need in a ziploc baggie or a small jar.
•1/4 cup paprika (try using half regular paprika and half smoked paprika)
•1/4 cup light brown sugar
•2 Tbs chili powder
•2 Tbs kosher salt
•2 Tbs cracked black pepper
•1 1/3 Tbs granulated garlic
•1 1/3 Tbs granulated onion
•2 tsp ground cumin
mix them all up and store in an airtight container.
