Wild Pulled Pork Sandwich
• one 9” x 5” bread pan
• one 8” section of Wild pig backstrap/tenderloin
• 16 oz. of your favorite BBQ sauce
• 2 table spoons grape jelly
• ¼ cup honey (local natural honey)
• Garlic salt and lemon pepper
• One yellow onion
• One purple onion
• Six sandwich rolls (whatever your favorite is)
• Horseradish (optional)
Heat oven to 350 degrees:
Season pork with garlic salt and lemon pepper. Mix BBQ sauce, honey and grape jelly in separate bowl. Set pork in pan and ad sauce, sauce should just cover pork. Cover bread pan with aluminum foil. Put in 350 degree oven for 1 ½ hours. Grill onions and ad to pork at 1 ½ hours. Put foil back over bread pan and cook in same 350 degree oven for 1 more hour (the smell should be driving you crazy by now). Remove from oven, uncover and put pork on separate plate. With two forks (pork is hot) pull pork into bite size pieces. Return to bread pan. Mix onions, sauce and pork thoroughly and place in oven for 10 minutes. Remove and serve immediately on sandwich rolls. Use extra sauce in pan for bread and apply horseradish if desired.
